Farming is in the blood of this family. Wayne Wilhelm grew up on a farm in Brooke County, WV. He and his father, Stanley, farmed together for many years until Wayne purchased this farm in 1966. He and his wife, Marguerite (Peggy), raised four children here—Becky, John, Nathan and Anne. This farm had Holstein cows until 10 years ago when we switched to grass fed beef.
Wayne has a vested interest in going above and beyond in caring for the land and the animals. He has taken courses, attended conferences, listened to recordings and built a vast library of books he has read. He implements the highest standards—from no till farming to supplementing with Selenium and more. He has worked diligently to share this information with his children to keep the farm thriving for many years to come. We look forward to sharing our knowledge with you.
We are greatly saddened by the loss of Wayne in August 2019. He led this family until his last day with honor and dignity. It is our great privilege to carry on his legacy and to fulfill his dream of marketing the highest quality grass fed beef.
All of our cattle are raised and grown naturally in WV — entirely grass fed and given a mineral buffet to ensure optimal health. Our cattle have no hormones, no steroids, no growth implants and no unnecessary antibiotics. Additionally, our cattle drink spring water.
Grass-fed beef isn't just a marketing gimmick to get you to pay more. When you look at the research, the overall long-term benefits are hard to ignore compared to conventional beef. Grass-fed beef is lower in calories, contains more healthy omega-3 fats (which can reduce inflammation), low amounts of saturated fats can reduce the chances of heart disease, more vitamins A and E, higher levels of antioxidants, up to seven times the beta-carotene, one of the most prominent nutrients found in grass-fed beef is conjugated linoleic acid (CLA) (which fights off cancer) and the production of grass-fed beef is far less harmful to the environment than conventional beef since the amount of greenhouse gas emissions are lower.
One of the beauties of buying in bulk is that the price you pay per pound covers everything from ground beef all the way up to steaks that would cost more than $10 per pound if bought individually, where you are paying $4 per pound based on hanging weight! Another advantage of purchasing beef by half and whole is so that you can provide specific cutting instructions to suit your family needs.
"Hanging weight" is the weight of a side of beef as it hangs on the rail in a meat cooler.
A 1200 pound steer has about a 750 pound carcass. From that you will get about 65% of the carcass weight, or roughly 490 pounds as boneless, trimmed beef. This is approximately 40% of the live weight. Remaining components of the carcass weight are about 20% fat trim and 15% bone. This amount varies by animal - these are approximations.
Hauling fee of $1.00/mile round trip farm to butcher.
Storage space needed: typically, a half of beef will require about eight cubic feet of freezer space. Purchasing in volume can save the average family of 5 up to $800 per year.
We require a non-refundable deposit for our meat $500 to reserve a half and $700 to reserve a whole. The deposit gets subtracted from your total bill from us.
